Haskap berry and rosemary sauce for meat and fish

Ingredients:
1 glass of haskap berries
1 tablespoon of water
1 tablespoon of champagne or white wine
Half of one shallot
2 teaspoons of rosemary (dried or fresh)
A pinch of salt
A pinch of pepper

Preparation:
1. Cut the shallot into a small cube. Rub in the palm of your hand dried rosemary or shred the fresh.
2. Place the berries, water, wine / champagne, shallot and 2 teaspoons of rosemary in a small saucepan.
3. Cook over medium heat until the berries disintegrate and the sauce is thick.
4. Season with salt and pepper.

Haskap berries sauce is great as an addition to salmon, scallops, as well as to meat or crostini.
